The structure is encircled by lush grounds and verdant foliage in the May Day Hills gardens found in the heritage list, some of which were donated in the 1860s by the Royal Botanical Gardens. The motel has kept its mid-century modern origins, but the accommodations have been updated for optimum coziness. The Linaker rooms were the former nurse’s accommodations at the defunct Beechworth Asylum, which will be recognized by those who are familiar with some of Beechworth’s more horrifying past. Since Catherine Foote, a former chef, took over management of Kyneton Springs in 2014, it is fair to say that exceptional cuisine and drink are a major emphasis. Have a traditional drink at the hotel’s on-site bar, the Terrace, or order breakfast to be brought right to your room through a morning hatch. Nothing is greater than that.
